3 lb. small (about 2 inches in diameter) white or yellow potatoes, halved

3 Tbsp. vegetable oil, divided

4 Tbsp. unsalted butter

2 Tbsp. chopped fresh flat-leaf parsley

1 Tbsp. lemon zest (from 1 lemon)

1 ½ tsp. kosher salt

½ tsp. black pepper

1. Toss potatoes and 2 tablespoons oil in a microwavable bowl; cover with plastic wrap, and microwave on HIGH until softened, 5 to 7 minutes.

2. Melt butter with remaining 1 tablespoon oil in a large skillet over medium until sizzling. Add potatoes, cut sides down, to skillet, and cook until golden brown on bottom, about 8 minutes. Turn potatoes, and cook until golden brown and tender, about 8 minutes. Transfer potatoes to a large bowl; sprinkle with parsley, lemon zest, salt, and pepper. Toss to coat, and serve hot.

Quick Kentucky Modjeskas

MAKES ABOUT 5 DOZEN

Modjeskas are traditionally homemade marshmallows dipped in buttery caramel and served as a solo sweet or with coffee.

1 (14-oz.) can sweetened condensed milk

1 (11-oz.) pkg. caramel candies

½ cup (4 oz.) salted butter, cubed

1 tsp. kosher salt

1 tsp. vanilla extract

1 (16-oz.) pkg. marshmallows

1. Stir together sweetened condensed milk, caramel candies, and butter in a medium saucepan over low. Cook, stirring often, until butter and caramels are melted and mixture is completely smooth, about 3 minutes. Remove from heat, and stir in salt and vanilla.

2. Using a fork, dip marshmallows in melted caramel mixture, scraping off excess mixture. Place dipped marshmallows on a large wax paper-lined baking sheet. Chill until set, about 1 hour. Store in a single layer in an airtight container in the refrigerator up to 3 days.
